Turmeric Cauliflower Rice

I love this bright cauliflower rice. It gets its vibrancy from turmeric, which is a great super-nutrient.  It has anti-inflammatory and antioxidant properties which is really useful whether trying to improve your fertility or enhance your overall health.  Cauliflower is also rich in antioxidants and folate.  It also contains compounds that may help balance hormones.

And on top of that it is so easy to make and to use leftovers to make a great base for a meal the next day.  Add some grilled chicken and a side salad and you’ve got yourself a tasty meal.

Ingredients
1/2 medium cauliflower finely chopped in a processor
2 garlic cloves, finely chopped
1/2 onion, finely chopped
1/2 tsp ground turmeric
2 tsp of refined coconut oil

  • Heat the oil and saute the onions and garlic until softened.
  • Add the turmeric and stir for a minute or too.
  • Add the cauliflower and stir over a low heat for about 10 minutes
