Spicy Pork Patties with Turmeric Cauliflower Rice

Ok! Not the best picture but you know that old saying, looks can be deceiving! I know how hard it can be to find quick and easy dinner recipes that will appeal to all of the family and not have you slaving over the hot cooker for too long.  Even Steff ate 3 of these so they must be good! These spicy pork patties are perfect dished up with cauliflower rice or pitta bread with either a hearty, colourful side-salad or your favourite steamed veggies and a dipping sauce too.

Ingredients: Makes 12
Patties
1 large handful of parsley leaves, roughly chopped
5oog minced pork
1 egg, beaten
2tsp sumac spice mix
1 tsp of paprika
2 garlic cloves, crushed
pinch of salt
2 tsp of refined coconut oil

Cauliflower Rice
1/2 medium cauliflower finely chopped in a processor
2 garlic cloves, finely chopped
1/2 onion, finely chopped
1/2 tsp ground turmeric
2 tsp of refined coconut oil

  • To make the patties, simply combine all the ingredients in a bowl and mix well.
  • Roll a generous tablespoon of the mixture into balls and then flatten into the shape of a pattie
  • Cover and chill in the fridge for 10 minutes
  • Heat the oil over a medium heat and then cook each pattie for 3 minutes each side until cooked through.
  • To make the cauli rice, heat the oil and saute the onions and garlic until softened.
  • Add the turmeric and stir for a minute or too.
  • Add the cauliflower and stir over a low heat for about 10 minutes.

Serve the patties on a bed of cauliflower rice with a side-serve of veggies and a dipping sauce. Yum!
