Spicy Bbq Sweet Potato and Chickpea Salad

I love my cooked veggies to have a bit of a twist and this spicy bbq sweet potato and chickpea salad is great on its own or as a side to bbq chicken.  The great thing about it is that you can cook the veggies at the same time as some chicken thighs.  The spinach will give you some folate whilst the sweet potato is great for increasing your antioxidants.  And the sweet potato and chickpea will provide good levels of protein too.

Ingredients: serves 4/5 as a side-salad

  • 1 medium sweet potato, cut into 1cm cubes
  • 2 medium carrots, cut into 1cm cubes
  • 1 tsp of ground cumin
  • 3 tbsp of refined coconut oil
  • 1 red onion, finely sliced
  • 400g tin of chickpeas, rinsed and drained
  • 1 small handful of flat-leaf parsley, chopped roughly
  • 1 cup of baby spinach
  • juice of 1/2 small lemon
  • 4 tbsp of harissa*
  • salt and pepper

Stir the cumin into 2tbsp of the melted coconut oil then mix in the sweet potato and carrot cubes.  Sprinkle on some salt and pepper.  Place in a heat-resistant dish.

Cook on a covered bbq (I used a weber) on a medium heat for 25 minutes or until cooked through.

At the same time, you can cook some chicken thighs.

Meanwhile, heat the remaining coconut oil and saute the onions until softened.

Add 4 tbsp of the harissa and chickpeas; cook for about 5 minutes.

When everything is cooked, combine the bbq veggies with the parsley, spinach and the harissa mixture and add the lemon juice and extra harissa if you’d like a bit more fire!

*You can buy harissa from a supermarket or if you want a mild, chilli-free version simply bbq a red capsicum pepper (along with the other veggies) for about 20 minutes; then carefully remove the seeds, skin and stem etc and chop into chunks.  Add it to 40ml of refined coconut oil, 2 garlic cloves, 3/4 tsp of ground coriander and 1/2 tsp of ground cumin in a food processor and blend until it forms a paste. Add chilli if you need some heat.
