Green Fertility Salad

This gorgeous green fertility salad is brimming with superfoods and nutrients to help boost your fertility.  As always the key to a great salad is variety; variety in colour and variety in ingredients and texture.  Lots of antioxidants and good fats in this one which are great for fertility.  Plus, the added bonus of lots of flavour!  Perfect with grilled chicken or lamb and any leftovers are ideal for lunchboxes the next day.

The Salad
1 medium head of broccoli
1/3 purple cabbage, thinly sliced
2 handfuls of baby spinach
1 small handful of chopped fresh coriander
1 medium zucchini
2 spring onions
¼ cup raw almonds: lightly chopped
¼ cup sunflower seeds
¼ cup pumpkin seeds

The Dressing
1 avocado
2 tbsp chopped fresh coriander
Juice of ½ lemon
2 tbsp of extra virgin olive oil
1 medium garlic clove, finely crushed
4 or 5 tbsp water
Salt and pepper

Method

  • Lightly steam the broccoli florets for 5 minutes
  • Spiralise the zucchini or thinly slice with a potato peeler
  • Thinly chop the spring onions and the purple cabbage
  • Put the steamed broccoli into a large bowl with the other veggies
  • Combine all the ingredients for the dressing in a blender or food processor and mix until you are happy with the consistency
  • Shortly prior to serving, toss the veggies in the dressing and sprinkle on the nuts and seeds.
