Flavour-packed Beef Burgers

I must admit I love the idea of home-made beef burgers but I find that so often recipes just fail to deliver on flavour. Well, not any more!  Thanks to this one from Chef Pete Evans which I’ve tweaked ever so slightly. No complicated ingredients and definitely scores high with my taste buds!

Ingredients
500g organic beef mince (not extra lean)
½ onion, chopped finely
2 garlic cloves, crushed
1 tbsp Dijon mustard
Pinch of dried chilli flakes
Handful of parsley – chopped
½ tsp dried Mediterranean herbs
1 tsp of Himalayan rock salt
½ tsp of ground black pepper
1 egg, beaten

Simply combine all ingredients and form into 4 patties.  Cook on your bbq plate or for about 15 minutes in an oven preheated to 200c.

If you are avoiding bread, serve the beef burgers on a large mushroom with added tomato, lettuce, grated carrot and beetroot on a bed of extra salad leaves and steamed veggies.  Perfect to make ahead and store in the freezer for when you need a quick meal.
