I know sometimes how the thought of another salad can fill you with dread, but I promise, this vibrant salad is packed full of flavour and nutrients.  I’ve teamed it here with goat’s fetta but it works just as well with grilled or barbecued chicken. I love my cooked veggies to have a bit of a twist and this spicy bbq sweet potato and chickpea salad is great on its own or as a side to bbq chicken.  The great thing about it is that you can cook the veggies at the same time as some chicken thighs.  The spinach will give you some folate whilst the sweet potato is great for increasing your antioxidants.  And the sweet potato and chickpea will provide good levels of protein too.
