Vibrant Mediteranean Salad

I know sometimes how the thought of another salad can fill you with dread, but I promise, this vibrant salad is packed full of flavour and nutrients.  I’ve teamed it here with goat’s fetta but it works just as well with grilled or barbecued chicken.
